Ingredients: 2 ripe bananas, mashed. 1/4 cup honey. 1/4 cup unsweetened applesauce. 1/4 cup Greek yogurt. 1 egg. 1 tsp vanilla extract. 1 cup whole wheat flour. 1/2 cup rolled oats. 1/4 cup chopped walnuts. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp cinnamon. 1/4 tsp salt.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine the mashed bananas, honey, applesauce, Greek yogurt, egg, and vanilla extract. Mix well. In a separate bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts. Divide the batter evenly among the muffin cups in the tin. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
