Ingredients: 2 pints mint chocolate chip ice cream. 1 package chocolate sandwich cookies. 1/2 cup unsalted butter, melted. 1/4 cup sugar. 1 cup heavy cream. 1 teaspoon vanilla extract. 1/2 cup mini chocolate chips. 1/4 cup chopped fresh mint leaves.
Instructions: Take the mint chocolate chip ice cream out of the freezer and let it soften slightly. Meanwhile, crush the chocolate sandwich cookies into fine crumbs using a food processor or by placing them in a resealable plastic bag and crushing them with a rolling pin. In a bowl, mix the cookie crumbs with melted butter and sugar until well combined. Press the cookie mixture into the bottom of a 9-inch springform pan to form the crust. Spread the softened ice cream evenly over the crust and smooth the top with a spatula. Cover the pan with plastic wrap and freeze for at least 4 hours or until firm. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form. Remove the cake from the freezer and carefully release it from the springform pan. Spread the whipped cream over the top of the frozen ice cream cake. Sprinkle mini chocolate chips and chopped fresh mint leaves over the whipped cream layer.
