わさびな

他の野菜の種子を買った際に、おまけで貰ったワサビナの種。それはごく少量で期待すべくもなかったが、小さなポット数個に蒔いたところ、しばらくしてコンスタントに発芽した。その後、株がある程度の大きさに成長したところで畝に移植したのだが、害虫の猛攻を受けることになった。アブラナ科なのでまだ暖かい季節では食害のリスクを受けやすかったということはあるが、それにしてもあまりにも突出して酷くやられたから、当地で育てるにはいかんせんひ弱すぎると結論づけ終了したのだった。

ところが翌年の冬、他の冬野菜が植わる畝にポツリポツリとワサビナが自生してきた。壊滅したと思いこんでいたが、満身創痍になりながらも生き延びて種を飛ばしたんだろうね。生命のしぶとさにはしばしば驚かされるが、じつは諦めて放置したらその後意外な結果に、、、と言うのは当地では「あるある」な話なのよ。

まあ折角生えてきてくれたので、移植して同じ畝に集めることに。成長はゆっくりではあるけれども、地面が凍る寒さにも強烈な西風にもめげず葉を広げる。一見厳しい環境のようにも思うが、この野菜にとっては害虫が最も少なくなるこの季節のほうが快適なのかもしれないね（まあ私には食われるけど）。

一枚一枚の葉は成長しながら細かく分岐し、その末端でも小さな切れ込みがたくさん入る。一見するとミズナに似ているが葉脈の入り方が大分違う。カラシナの変異種らしい。

大きく育った外葉を摘み取って収穫する。何でもそうだが穫りたては瑞々しい。

食べ方はいろいろあるようだけど、ピリッとした爽やかな辛さを生食で味わえるのがこの野菜の特長だろう。旨味もかなり感じられる。オリーブオイル＆黒胡椒＆塩を振ってサラダにしても良いし、写真のようにただマヨネーズをかけてサンドイッチにしても充分に美味しい。ただ、葉にそれなりのモサモサ感があるので人によって好き嫌いは分かれるかも。
