🍕 Went to @farina_pizzeria quite a while ago and didn’t post it. Maybe I was saving it for this special day, who knows. Good sides, good pizza, the crust would need to be quite softer to make it one of my top picks for Neapolitan pizza though. [ITALIAN CULTURE IN QUARANTINE: 3/-]: PIZZA MARGHERITA
[EN] A simbol of Italy is our flag which we commonly nickname "Il Tricolore" ( the tricolour flag ). Incidentally, the colours of the Tricolore - green, white and red - are the ones you can also see in the famous pizza margherita (basil, tomato, mozzarella) There's actually a legend around it! The pizza was named after Margherita, queen of Italy, during a visit of hers in Naples in 1889 (fact). The legend states that the pizza was specifically invented for the queen, and that the colours were chosen accordingly to remind the flag! Truth is that, according to official documents, this kind of pizza was invented way before, between 1796 and 1810.

Come molti di voi sanno, la pizza fu chiamata così in onore della Regina Margherita che era stata in visita a Napoli nel 1889. La leggenda vuole che la pizza sia stata inventata specificatamente per lei e che "i colori" siano stati scelti di proposito per ricordare la bandiera. In verità, secondo documenti ufficiali, questo tipo di pizza fu inventato molto tempo prima, tra il 1796 e il 1810.

Journey to the Imperfect Neapolitan Pizza Crust
Truth be told, one of the reasons why we went to Europe was because the hubby wanted to eat all the pizza. Neapolitan pizza that is. One specific stop on our trip was the City of Naples where, yes, we ate a fuckton of pizza. Since coming home, the hubby has been obsessed with perfecting the perfect pizza crust, one that suits our preference of the thin, fluffy interior with a slightly crunchy exterior.
Honestly, the first time we tried making pizza dough, we used all the wrong flour. And then after hiking and pitstopping at a small Italian market we saw on the way home, we found the perfect flour that we needed in order to up our pizza crust-making game: Caputo 00 flour. It’s a much thinner, softer flour that’s ideally used for pizza making and so...
... at 10pm, we made pizza crust. Honestly, it’s not a long of ingredients. It’s salt, yeast, water, flour, and some extra virgin olive oil at the end to keep it moist while it’s proofing. Really, there’s not much to it. The key is the technique you use to prepare your dough and giving the dough enough space to proof for 24 hours.
Once it became a big dough ball the next day, we then split it up into 5 smaller dough balls so we can make smaller pizzas to snack on. We actually let those proof again for another 24 hours.
And of course, when is the best time to make pizza? Any time! We always make at least one margarita pizza each time we make the dough as a benchmark. This pizza was a midnight snack for the hubby, and honestly the crust came out nice and thin, just like the pizza we saw in Naples!
