Thanks Glory! And I'm not an expert with gouache, but I can tell you essentially what I just told Maria.
Gouache is SUPER tempermental, and you really need to pay attention to the paint/water ratios while you're mixing color. If you have too little water, the paint will be a sticky goo that's not only hard to paint with, but will also crack off once it dries. On the other hand, if it has too much water, the painting can dust off when it dries, and (what I've found the most frustrating) if you try to layer while the paintbrush is too wet, you'll literally lift up the layers beneath and then your colors can get muddy and you'll lose some of your hard worked painting.
with that said, it also has super vibrant colors and is really satisfying to paint with once you learn what not to do, and it can be reactivated with water at any time, so you don't waste a lot of paint like with acrylic. It also dries matt, which I personally like.
