i turned my mattress around and i’m gonna try not to sit on it so i don’t make it uneven / uncomfortable to sleep on. i really hope i can get some real sleep tonight instead of tossing and turning w/ indigestion all night.

i just wanted to submit the phở recipe that was on the guardian a few months back. it gave me a lot of rage since it was essentially just plain beef broth - with no spices or onion or anything! (at least they got the rice noodles right…) on top of that, i’m not sure why he suggests jalapeno peppers and not the usual Ớt that we use. my background is also người bắc (north vietnamese) and we don’t put things like hoisin sauce or beansprouts in our phở, that’s pretty much blasphemy but i think south vietnamese do? (though my understanding of it is that hoisin sauce is a relic from the vietnam war when there were a lot of americans around and they’d put hoisin sauce in everything, and it just got transferred over to general south viet culture? someone can correct me on that of course).
mod edit- yeah tuong den and jalapenos are def a thing south viet’s do! but ick at this recipe…… how can you call it pho without pho spices? no no no
