Salted Nut Roll

An exotic gift from the faraway land of Minnesota! Japan does have some nut-based candies, but wow I really miss peanut butter cups, peanut brittle, and now this! I’m not sure what the goo inside was, but it was sweet and I liked it, and the peanuts were all salty and crunchy and craveable.

Vanilla Pudding or Nut Roll

1 lb vanilla wafers 1 lb walnuts 1 lb dates 1 cup cream

Marshmallows if desired.

Roll wafers, walnuts and chop dates. Mix with cream. Roll it into a roll and wrap in waxed paper. Chill and serve with whipped cream.

These hazelnut twists were inspired by a Slovak nut roll called Orechovnik. Twists are a lot prettier and easier to eat. They also freeze well.

I swear these things used to be called Peanut Nut Rolls back in the day, and joking about it, but I’m not finding any photo evidence of it online.
