These healthy blueberry oatmeal muffins are a guilt-free treat that's perfect for breakfast or a snack. Packed with whole grains, antioxidants from fresh blueberries, and optional nuts and flax seeds for added nutrition, you won't believe how light and delicious they are!
Ingredients: 1 1/2 cups old-fashioned oats. 1 cup whole wheat flour. 1/2 cup almond flour. 1/2 cup Greek yogurt. 1/2 cup unsweetened applesauce. 1/4 cup honey. 1/4 cup coconut oil melted. 2 eggs. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup fresh blueberries. 1/4 cup chopped walnuts optional. 1/4 cup flax seeds optional.
Instructions: Warm your oven up to 350 F 175C and put paper liners in a muffin tin. Pulse the oats in a blender or food processor until they look like rough flour. Mix the almond flour, whole wheat flour, oat flour, baking powder, baking soda, and salt in a large bowl. Mix the Greek yogurt, applesauce, honey, coconut oil, and eggs together in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Fold the fresh blueberries and, if you want, the chopped walnuts and flax seeds in slowly. Fill up each muffin tin cup about two thirds of the way to the top with muffin batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. First, let the muffins cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. Have fun with your healthy muffins made with blueberries and oatmeal!
