Ingredients: 2 ripe bananas, mashed. 2 cups rolled oats. 1/2 cup Greek yogurt. 1/4 cup honey or maple syrup. 2 eggs. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/2 tsp baking powder. 1/2 tsp cinnamon. 1/4 tsp salt. 1/2 cup blueberries optional. 1/4 cup chopped nuts optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine the mashed bananas, Greek yogurt, honey or maple syrup, eggs, and vanilla extract. Mix well. Add the rolled oats, baking soda, baking powder, cinnamon, and salt to the wet ingredients. Stir until everything is well combined. If desired, gently fold in the blueberries and chopped nuts into the batter. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into a muffin comes out clean.
