Ingredients: 6 bone-in, skin-on chicken thighs. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon paprika. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1/2 teaspoon sea salt. 1/4 teaspoon black pepper. Juice of 1 lemon. Fresh parsley, chopped for garnish.
Instructions: Set oven temperature to 400F 200C. Combine olive oil, paprika, oregano, thyme, minced garlic, salt, and pepper in a small bowl. After using paper towels to pat dry, put the chicken thighs in a baking dish. Make sure the chicken thighs are evenly coated by brushing them with the olive oil mixture. Drizzle with lemon juice the chicken thighs. Bake the chicken for 3540 minutes in a preheated oven, or until it reaches an internal temperature of 165F 75C and the juices run clear. Before serving, sprinkle some freshly chopped parsley on top.
