The first beets came in (blech) But the hubby loves them so I cook them. . Sauteed beet greens on the bottom: I just sauteed the greens in a bit of olive oil until they wilted then I finished them with a splash of fresh orange juice and some rice vinegar. . The beets I peeled and diced, then tossed them into the instant pot with just enough water to cover. I added a spice bag with two star anise, a tsp of dried cloves, 1/2 tsp cardamom seeds and a tsp allspice. I set it for brown rice and let it cook. . I had some leftover jasmine rice in the 'fridge that I warmed in the pan that I sauteed the beet greens. I tossed in a handful of dried cranberries and a few twists of fresh ground pepper. . I toasted a couple TBS of walnuts. . When the beets were finished I put the greens on the plate, topped with the rice, followed by the beets and topped with the walnuts. . Hubby loved it.
