Ingredients: 2 ripe bananas, mashed. 1/2 cup almond flour. 1/4 cup coconut flour. 1/4 cup unsweetened almond butter. 1/4 cup coconut oil, melted. 2 eggs. 1 tsp vanilla extract. 1 tsp cinnamon. 1/2 tsp baking soda. 1/4 tsp salt. 1/4 cup chopped walnuts optional. 1/4 cup dark chocolate chips optional.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners. Mashed bananas, eggs, melted coconut oil, almond butter, coconut flour, vanilla extract, cinnamon, baking soda, and salt should all be combined in a mixing bowl. Thoroughly mix until a smooth batter is achieved. For extra taste and texture, feel free to mix in the chopped walnuts and dark chocolate chips. Pour the batter into the muffin tin that has been preheated, filling each cup about two-thirds of the way. A toothpick inserted into the center of a muffin should come out clean after 20 to 25 minutes of baking in a preheated oven.
