Ingredients: 3 cups almond flour. 1 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 3 eggs. 1/4 cup honey. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1 cup grated zucchini, excess moisture squeezed out.
Instructions: Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and coat a loaf pan with coconut oil. Combine almond flour, baking soda, cinnamon, and salt in a big bowl. Whisk eggs, honey, melted coconut oil, and vanilla extract in a separate bowl. After adding the wet ingredients to the dry ingredients, thoroughly mix them together. Grated zucchini should be incorporated into the batter by folding it in evenly. After filling the loaf pan, level the top of the batter. When a toothpick inserted into the center comes out clean, bake for 45 to 50 minutes. Before slicing, let the bread cool in the pan for ten minutes before moving it to a wire rack to cool completely.
