A delicious and moist Paleo banana bread made with coconut flour and arrowroot powder. This treat is ideal for breakfast or as a snack because it is free of gluten, grains, and dairy.
Ingredients: 3 ripe bananas, mashed. 3 eggs. 1/4 cup almond butter. 1/4 cup coconut oil, melted. 1/2 cup coconut flour. 1/4 cup arrowroot powder. 1 tsp baking soda. 1 tsp cinnamon. 1/4 tsp salt. 1 tsp vanilla extract. 1/4 cup chopped walnuts optional. 1/4 cup dark chocolate chips optional.
Instructions: Set the oven temperature to 175C 350F. Grease and put aside a loaf pan. Melted coconut oil, almond butter, eggs, and mashed bananas should all be combined in a big mixing bowl. Blend thoroughly. Mix the coconut flour, baking soda, cinnamon, arrowroot powder, and salt in a separate bowl. Stirring constantly, gradually add the dry mixture to the wet mixture until thoroughly blended. If desired, fold in chopped walnuts and dark chocolate chips after stirring in vanilla extract. After the loaf pan has been oiled, transfer the batter there and level it out. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven. After taking the banana bread out of the oven, let it cool in the pan for ten or so minutes. Before slicing, move the bread to a wire rack to cool completely.
