This campfire apple crisp breakfast is a warm and tasty vegan treat that is great for enjoying outside. Apples that have been cut up are covered in maple syrup and warm spices. A crunchy mixture of nuts and oats is then sprinkled on top. This breakfast is simple to make and tastes great. It is cooked over an open flame in foil packets.
Ingredients: 4 large apples, cored and diced. 2 tablespoons maple syrup. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1 cup rolled oats. 1/4 cup almond flour. 1/4 cup chopped nuts walnuts, pecans, or almonds. 2 tablespoons coconut oil, melted. 2 tablespoons maple syrup. Pinch of salt.
Instructions: In a large bowl, toss diced apples with maple syrup, cinnamon, and nutmeg. In another bowl, mix rolled oats, almond flour, chopped nuts, coconut oil, maple syrup, and a pinch of salt until well combined. Divide the apple mixture evenly among four individual aluminum foil packets. Top each packet with the oat mixture. Fold the foil packets to seal tightly. Place the foil packets on a campfire grill over medium heat and cook for 15-20 minutes, or until the apples are tender and the topping is crispy. Carefully open the foil packets, let cool slightly, and enjoy!
