Ingredients: 4 chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 3 tablespoons bourbon. 2 tablespoons Dijon mustard. 1/4 cup chicken broth. 2 tablespoons butter. 2 cloves garlic, minced. 1 tablespoon chopped fresh parsley for garnish.
Instructions: On both sides, salt and pepper the chicken breasts. Put olive oil in a big skillet and heat it over medium-high heat. When you add the chicken breasts to the pan, cook them until they are browned, which should take about 6 to 8 minutes per side or until the internal temperature reaches 165F 75C. Take the chicken out of the pan and set it aside. Mix bourbon, Dijon mustard, chicken broth, butter, and minced garlic in the same pan. Stir the sauce every now and then as it cooks for about 3 to 4 minutes, or until it gets a little thicker. Put the chicken back in the pan, cover it with sauce, and cook for another two to three minutes to heat it through. Add chopped parsley as a garnish before serving.
