Parsnip Chips
Ingredients:
-1 tbsp olive oil
-3 parsnips, sliced thinly and evenly
-Salt and pepper to taste
Directions
1. Coat parsley slices in olive oil. Spread evenly on a baking sheet.
2. Sprinkle with salt and pepper.
3. Bake in 400F oven for 45 minutes or until starting to brown, flipping halfway through.
Parsnip chips
It’s well known that potato chips go with everything: fried eggs, steak, sausages, battered fish. But they do need to be fried - even if you do the quick and easy method that involves cooking them from oil that is cold, so there is no spattering.
Here’s a quick idea - parsnip chips. They are actually strips of the white pointy vegetable brushed with oil and roasted. They are not a substitute for chips - they are something quite different: not so crisp, but appetisingly brown at the edges and with a faint sweetness that makes a change from a simple potato flavour.
Peel and cut three or four parsnips into sticks and lay them out on a lightly oiled tray. Toss them around so that none of the sides are dry. Sprinkle over some salt and pepper and cook in a hot oven 200C, 400F for 25 - 30 minutes. They will be soft inside and slightly browned at the edges.
Something interesting to serve with a drink before a meal or on the side with a creamy soup.

Vegetable chips and fries are by no means my own invention, but that doesn’t mean I will not make them every week. For my first parsnip experiment I dived in to make parsnip chips and parsnip fries! I even did a baked versus fried taste experiment.
