Salmon Croquettes always take me back to my childhood, and are perfect for the holidays! They are so crispy and flavorful. I made these with homemade croutons and a few other ingredients (and without peppers this time). Then pan-fried until golden brown. Serve with grits or rice. Oh, and you can't forget Buttermilk Biscuits aka "Not my Mama Biscuits"! 😂 iykyk!

I'm currently reading "The Sun Does Shine", the memoir of Anthony Ray Hinton, a man who spent 30 years on death row for a crime he didn't commit. It is because of stories like these why the Equal Justice Intiative (@eji_org) exists. The story of Mr. Hinton is so close to home---actually right here in my hometown in Jefferson County, Alabama. If you don't read anything else this summer, add this book to your reading list. A powerful story of hope, love, justice, forgiveness, and freedom. This book is also part @Oprah's 2018 Book Club. I'm grateful that Mr. Hinton is able to share his story with the world. I pray that this will be part of a movement for change when it comes to injustice.

Funniest Thanksgiving 

‘Tis the season of struggle plates and debates.  During this time of year, there is always a war going on the internet when it comes to holiday eats and what is and not acceptable. 

I shared a post where someone took it upon themselves to create an “Ultimate Mac-N-Cheese”.  In addition to Mac and Cheese, it had Brussels sprouts, carrots, squash, and  dressing for the “crunchy” top. Blasphemous!
