Bon Appetit Banff 2013 featuring 7 courses at Juniper Bistro
As I made the drive from Calgary this past foggy, cold night. I began to think about all the amazing culinary experiences that I have had in Banff over the past 15 years. When we were first in love, my future wife once promised me an amazing experience at The Grizzly House and with its 70's charm and rustic interior, did not disappoint. I recall an experience at The Bison where the proteins were so perfectly executed, I couldn't help but share my bison / beef with the rest of my party. I've been lucky enough to sample local delicacies at previous iterations of the Rocky Mountain Food and Wine Festival and hold a soft spot for the pork belly Mac and Cheese from The Bear Street Tavern. However, it wasn't until a few days ago that I found out that Banff, like Calgary's Downtown Dining Week has a 10 day culinary festival coined Bon Appetit Banff showcasing 30 of its eateries, restaurants and gastro pubs offering 3 course prix fixe dinner menus ranging from $25 to $45 per person.
Since all but one of the 30 restaurants were new to me, I was guided by Banff Lake Louise Tourism's, Tricia Woikin to the Juniper Bistro. The restaurant is nestled within the historic Juniper Hotel on the north side of the Transcanada offers stunning vistas of the town site and the surrounding mountains. For the duration of Bon Appetit Banff, Juniper Bistro is playing host to two B.C. based chefs, Stephanie Noel and Paul Moran whose 7 course creations feature both local and exotic ingredients. These courses were deftly paired by restaurant manager Justine Dart with wines from B.C. producers Blue Mountain and Tantalus. While each of the courses were special, the standouts for me were the Hamachi with kafir and white soy sorbet (paired with the off dry 2012 Tantalus Riesling).

The Sea Buckthorn Puree with pumpkin granola and whipped ricotta.
While all courses were superb, these three had a deftness of technique and creativity while achieving textural and flavor balance. For the quality of ingredients and the thoughtfulness of the presentation, the asking price of $45 is a major bargain to experience artistic creations like these.
