Indulge in the delightful combination of creamy coconut ice cream swirled with sweet peaches and nectarines. This tropical-inspired treat is perfect for hot summer days or anytime you crave a refreshing dessert.
Ingredients: 400ml coconut cream. 400ml coconut milk. 200g sugar. 2 peaches, diced. 2 nectarines, diced. 1 tbsp lemon juice.
Instructions: Over medium-low heat, mix coconut cream, coconut milk, and sugar in a saucepan. Bring the mixture to a low boil and stir it around until the sugar is gone. Take it off the heat and let it cool down all the way. In a different bowl, mix lemon juice with diced peaches and nectarine. With a blender, blend the fruit mixture until it is smooth. Put the cooled coconut mixture into an ice cream maker and churn it as directed by the maker's maker. Slowly add the fruit puree to make swirls in the last few minutes of churning. The ice cream should be put in a container and frozen for at least 4 hours, or until it is firm. Enjoy scoops of coconut peach nectarine ice cream!
