Peanut Butter Crunch Chocolate Bites These delightful bites combine the rich flavor of peanut butter with the satisfying crunch of Rice Krispies, all enrobed in a smooth layer of chocolate. Perfect for a snack or dessert! Ingredients 2 cups crisped rice cereal (Rice Krispies) 1 ½ cups crunchy (all-natural, unsweetened) peanut butter *if using sweetened, omit the maple syrup 1 teaspoon vanilla extract 1 Tablespoon maple syrup 16 ounces semi-sweet or dark chocolate chips Instructions Line a baking sheet with parchment paper. In a medium-sized bowl, combine the rice cereal, peanut butter, vanilla extract, and maple syrup. Use a rubber spatula to mix thoroughly. Scoop out the mixture using a 1-inch cookie scoop and place onto the prepared baking sheet. Set aside and refrigerate the balls to firm up while preparing the chocolate. In another medium-sized bowl, add the chocolate chips and microwave for 30 seconds on high. Stir well and repeat the process until the chocolate is almost melted, being careful not to overheat. Stir for several minutes until fully melted and at a neutral temperature. Using a fork, dip each peanut butter ball into the melted chocolate. Tap the fork against the bowl's edge to remove excess chocolate. Transfer the coated balls back onto the parchment-lined baking sheet. Allow the chocolate to set completely, which usually takes a few minutes (or refrigerate for 10 minutes to speed up the process). Notes Store in an airtight container at room temperature for up to 2 weeks. To freeze, place in a freezer bag and store for up to 3 months. Thaw overnight in the refrigerator or on the counter for one hour. Refrigerating the peanut butter balls for at least 15 minutes before dipping will help the chocolate set better. If the melted chocolate thickens while dipping, microwave for an additional 15 seconds. You can make the peanut butter mixture ahead of time and store it covered in the refrigerator for up to 48 hours. When ready, scoop onto the baking sheet and dip in chocolate. For best results, use unsweetened peanut butter and omit the maple syrup if you opt for sweetened. If the mixture is too crumbly and doesnt hold together, add more peanut butter, one tablespoon at a time, until a sticky consistency is reached.
