For lovers of chocolate and peanut butter, these Chocolate Chip Shortbread Cookies with a creamy peanut butter filling and a chocolate dip are the ideal treat. They taste amazing and are very simple to prepare!
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1/2 cup granulated sugar. 2 cups all-purpose flour. 1/4 cup cornstarch. 1/2 cup mini chocolate chips. 1/2 cup creamy peanut butter. 1/2 cup powdered sugar. 1/2 cup semisweet chocolate chips, melted.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Sift in the all-purpose flour and cornstarch. Mix until a dough forms. Stir in the mini chocolate chips to distribute them evenly throughout the dough. Shape the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each cookie slightly with a fork, creating a crisscross pattern. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. While the cookies are baking, prepare the peanut butter filling. In a separate bowl, mix together the creamy peanut butter and powdered sugar until well combined. Once the cookies are done baking, let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cool, spread a teaspoon of the peanut butter mixture onto the bottom of one cookie and sandwich it with another cookie, creating a peanut butter-chocolate chip shortbread sandwich. Melt the semisweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Dip each cookie sandwich halfway into the melted chocolate, allowing any excess to drip off. Place the dipped cookies back on the parchment paper-lined baking sheet and let the chocolate set. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. If using, fold in the chopped walnuts and semisweet chocolate chips. Place tablespoon-sized pieces of the dough on the baking sheets that have been prepared, leaving space between each cookie. Put it in the oven for 8 to 10 minutes, or until the edges are set and the middle is still a little soft. When you take the cookies out of the oven, let them cool for 5 minutes on the baking sheets before moving them to wire racks to cool all the way. Add the peanut butter and powdered sugar to a bowl and mix them together until the mixture is smooth. Spread a lot of peanut butter filling on the bottom of one cookie.
