A delightful vegan cake made with hearty pearl barley and bursting with juicy mixed berries. This cake is not only delicious but also packed with wholesome ingredients.
Ingredients: 1 cup pearl barley. 2 cups mixed berries such as strawberries, blueberries, raspberries. 1 cup almond flour. 1/2 cup coconut sugar. 1/4 cup coconut oil, melted. 1/4 cup almond milk. 1 tablespoon ground flaxseed + 3 tablespoons water flaxseed egg. 1 teaspoon vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. Pinch of salt.
Instructions: Preheat oven to 350F 175C. Grease a cake pan with coconut oil. In a small bowl, mix ground flaxseed and water to create flaxseed egg. Let it sit for 5 minutes to thicken. In a large bowl, combine cooked pearl barley, almond flour, coconut sugar, coconut oil, almond milk, flaxseed egg, vanilla extract, baking powder, baking soda, and salt. Mix well. Gently fold in mixed berries into the batter. Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove from the oven and let it cool in the pan for 10 minutes. Transfer the cake onto a wire rack to cool completely before serving. Slice and enjoy!
