Apparently, just like with Mary, it was never specified. Cale thought of him as a stereotypical beautiful elf, and we jumped to conclusion that he must be blond, because Legolas. Of course.
In conclusion: Pendrick's silver/gray hair is as canon of a description as any. My bad.

I realize Cale never once brought Pendrick into active battlefields, because Cale knows of a different future where a different Pendrick has died in battle.
Cale changed Pendrick's fate once, and then decided to never even risk it at all and kept Pendrick firmly out of any battles.
