One Christmas meal that I was recently introduced to was Guyanese Pepperpot, a traditional dish that is rich in both flavor and culture. Pepperpot is a hearty stew made with either beef or pork, cassareep, and warm spices such as cloves, cinnamon, and peppers if you can handle the spice. All these ingredients combine into a pot, slow cooked for hours, sometimes days even, flooding the home with a festive and comforting aroma simultaneously.
My girlfriend's family made it this year for breakfast. Everyone in the house chipped in from chopping ingredients to prepping fresh bread to soak up the broth in the stew. It was clear how much pride and care went into every step. Pepperpot is a balancing act between modern and traditional food systems. Cassareep and locally found spices are now widely available thanks to global markets, but the slow cooking process and family collaboration reflect traditional methods that are passed on from generation to generation.
