These soft and tender sugar cookies are perfect for any occasion. They have a slightly crispy exterior and a wonderfully chewy interior, making them a hit with both children and adults.
Ingredients: 1 cup 226g unsalted butter, softened. 1 1/2 cups 300g granulated sugar. 2 large eggs. 1 teaspoon pure vanilla extract. 3 1/2 cups 440g all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup 120ml buttermilk. Additional granulated sugar for rolling.
Instructions: Put the softened butter and granulated sugar in a large bowl and mix them together until they are light and fluffy. One at a time, add the eggs and mix well after each one. Add the vanilla extract and mix well. Mix the all-purpose flour, baking powder, baking soda, and salt together in a different bowl. Add the dry ingredients to the wet ingredients one at a time, mixing in the buttermilk between each addition. Start with the dry mixture and end with the buttermilk. Don't mix any further than that. Place the dough in the fridge for at least an hour, or until it is firm. Warm your oven up to 350F 175C and put parchment paper on a baking sheet. Make a ball out of about two tablespoons of dough. Coat each ball with more granulated sugar by rolling it in it. Spread the dough balls out on the baking sheet that has been prepared, leaving about 2 inches of space between each one. With the bottom of a glass or your fingers, gently press each ball down. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. You can enjoy these soft, tasty sugar cookies with your favorite drink or with family and friends.
