I baked a persimmon pie last night. Thanks @fishgirl182 for the fruit and @peppervg4 for the pie crust recipe. The filling and pecan streusel I got from @southernlivingmag online (although it's missing the quantity for pecans so I just made it up 🤪) I'm not great at handling pie crust yet, but it's delicious and tender. Next time I'm going to press the streusel flat on a plate before refrigerating it so I can just plop it on top instead of wasting time trying to get it spread out properly. 🥧 The ruffled pie plate is from @causebox (sorry, I don't know who the manufacturer is and I don't want to risk overturning it to check 🙃) and I think I need at least one more... I was going to try to bake a second pie (apple) but now I have nothing to bake it in 🤣. It may have to be an 🍎 tart. Also thanks to @thehormonediva Robin Srigley for the great information she has been sharing about PCOS. I've struggled so hard with my weight the past few years in addition to fertility problems, low energy, and occasional depression. Robin has helped me understand more about PCOS and how to adjust so I can feel good, get strong, and best of all have freedom to eat what I want instead of trying diets that don't work! Also now that I'm feeling more free in terms of what I eat, I'll be taking a baking class with @christinatosi through @learnmonthly. It starts Monday and I am so excited. It's been a long time since I felt good about baking regularly. I've just recently come to the realization that avoiding baking makes me sad!
