Pineapple and coconut cookies. These use real pineapple chunks, and some coconut flour. I added some yellow food coloring, and yellow & green sprinkles.

They taste OK, but they’re very soft and fragile. Also seem oddly dry, like you want to drink something immediately after biting into one. I did diverge a bit from the recipe, and maybe that’s the problem.
