Chicken, Mushroom, and Fennel "Pizza"
Cauliflower crust (1 serving)
1 cup cauliflower (fresh or frozen)
Oregano, Rosemary, Thyme, garlic powder, black pepper, and salt (optional) to taste (I usually just eyeball and taste test)
Cheese (optional- cheddar or parmesan cheese mixed into the cauliflower crust would enchance the flavor)
Microwave the cauliflower until tender (frozen =~2 minutes, fresh = ~6minutes). Strain excess water. Add cauliflower to a food processor and blend (it should look like a paste). Add the egg and spices and blend until egg is incorporated. Spray foil with olive oil, so the crush does not stick. Pour mixture onto a cookie sheet lined with foil and smoothed to a thin layer. Lightly spray the cauliflower mixture. Bake at 350º for ~10 minutes. Then move cookie sheet to the lowest shelf and broil for ~5-10 minutes or until the crust is a dark/golden brown.
Chicken, Fennel, Mushroom topping (1-2 pizzas)
¼ cup Shredded chicken (I used leftover thigh meat)
¼ Fennel bulb, cut in strips
1 tbsp Butter (I used Kerrygold, because it’s delicious)
I sautéed the fennel and mushrooms with the black pepper and salt until they were tender and carmelized. I then added my pre-cooked, hand-shredded chicken thigh meat, just until it warmed, and then removed the pan from the heat.
¾ small can of chipotle in adobo sauce
Add the mayonnaise and sour cream to a food processor and blend until incorporated. Chop the scallions and add to the mayo/sour cream mixture in the food processor, blend until incorporated. Add the spices and equal parts of the chipotle peppers and adobo sauce. I suggest adding the chipotle and sauce a pepper and teaspoon of sauce at a time (it can get very hot very quickly!). Store in the refridgerator.
Add the chipotle sauce to the cauliflower crust while the crust is still warm-hot. Add toppings. Chop the fennel fronds (the dill-like top of the fennel) as a garnish.
***I make large batches of the chipotle sauce because it’s delicious as a dip with veggies or just a grilled piece of meat, or when mixed into ground beef, stuffed into a bell pepper and topped with cheese.***
