This Paleo plantain breakfast bowl is a hearty and flavorful way to start your day without meat. The sweetness of the plantains pairs perfectly with the savory vegetables, creating a satisfying meal that's both nutritious and delicious.
Ingredients: 2 ripe plantains, peeled and sliced. 1 tablespoon coconut oil. 1/2 cup sliced mushrooms. 1/2 cup spinach leaves. 1/4 cup sliced red bell pepper. 1/4 cup sliced onion. 2 cloves garlic, minced. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a skillet, heat coconut oil over medium heat. Add sliced plantains and cook until golden brown, about 3-4 minutes per side. Remove plantains from skillet and set aside. In the same skillet, add mushrooms, spinach, red bell pepper, onion, and garlic. Cook until vegetables are tender, about 5-6 minutes. Season with salt and pepper to taste. Divide the cooked plantains into bowls and top with the vegetable mixture. Garnish with fresh parsley before serving.
