Sherbert and I made Taiwanese popcorn tofu with Thai sweet chili sauce to go with our boba matcha latte. It's pretty common to see Taiwanese popcorn chicken or tofu served in boba cafes! Sweet Thai Chili Sauce 🌶 1 cup sugar 🌶 1 cup water 🌶 2 tbsp minced garlic 🌶 1-2 tbsp dried chili flakes (or birds eye chili if you're fancy) 🌶 2 tbsp cornstarch (slurry) 🌶1-2 tbsp apple cider vinegar (to taste) Bring the water, sugar, chilis and garlic to a boil, stirring occasionally. Add apple cider vinegar, then add cornstarch slurry and bring back to a boil to thicken then let it cool. Taiwanese Popcorn Tofu 🍿 med-firm to firm tofu 🍿 cornstarch (or sweet potato starch) 🍿 1 tbsp chinese 5-spice powder 🍿 1 tbsp chili powder 🍿 1tsp salt 🍿addtl salt, chili and 5-spice for seasoning fried tofu afterwards Press the tofu between paper towels to squeeze out as much water as you can. I rested a cast iron on top of the tofu/paper towels. Cut the tofu into 1-1.5 inch cubes and toss in mixture of starch, salt and spices. Double fry and season with salt and spices. Serve with chili sauce. Note: if you want spicy you can add some cayenne to your seasonings. It was tasty but we want to try sweet potato starch instead of cornstarch next time.
