Put your skis up and rest awhile at my Charcuterie Chalet! The structure is freestanding and built of interlocking grissini. The roof is made of crackers shingled with salami. There are cornichon cobblestones, pomegranate seed lights, and rosemary trees. I used homemade queso as my mortar along with some cream cheese. The snow is a mix of parmigiano and pecorino. And for a little surprise, a potato stone chimney! Spanish Cheese Board- created for last month’s tapas themed cookbook club, and featuring only ingredients from Spain. Cheeses: 6 month Manchego, Monte Enebro, and Mahon Meats: Jamon Serrano and Mild Chorizo Extras: Tortas de Aceite, Quince Paste, Fig Almond Cake, Marcona Almonds I love putting together boards with a concept or theme, and Spanish is actually one of the easiest to achieve. Exactly 2 weeks left until my Certified Cheese Professional exam. I’ve spending my afternoons studying, taking practice tests, and making flash cards. And, of course, eating a lot of cheese. This is a throwback to when I first started in the cheese business, a full 3ish years ago. The board was inspired by the movie/book The Martian by Andy Weir. Hence- lots of orange, red, and potatoes. I’m super excited to announce that I was awarded a spot in the Certified Cheese Professional Training Program through my day job! That means that after next week it will be all cheese, all the time! We threw a tea party in her honor on Saturday, and this cheese plate was the main event.
