Hello, cheese lovers!!! Life has been crazy these past few months, and I've accidentally abandoned you- but never fear! I'm still living the cheesiest of lifes, and am back to spread the word of the curd! I recently accepted a job in Seattle, working for a kick*ss family owned cheese company, and get to drive this beautiful truck around the PNW, slinging cheese. Isn't that AMAZING?! I'm officially a cheese trucker! I get to curate the selection of cheese and charcuterie that I load up on the truck, which is basically a warehouse on wheels, and go around to chefs and retailers and sell directly off of the truck. Cool, huh?! I won't bore you guys by telling you how FLIPPING ridiculous our cross country move was- it was long, it was strenuous, it was expensive, and lots of things went wrong. But we made it, and are totally loving the great Pacific Northwest! I'm going to be much better about keeping up with you guys- from my travels around Oregon and Washington with the cheese truck, to Fancy Food Shows and the American Cheese Society Conference- I'll make sure your lives stay cheesy 😉 I'm back, baby!

Put your skis up and rest awhile at my Charcuterie Chalet! The structure is freestanding and built of interlocking grissini. The roof is made of crackers shingled with salami. There are cornichon cobblestones, pomegranate seed lights, and rosemary trees. I used homemade queso as my mortar along with some cream cheese. The snow is a mix of parmigiano and pecorino. And for a little surprise, a potato stone chimney! I hope everyone had a safe and fun Halloween! I made this cheeseboard for our very small but festive gathering. Featuring: 1. Cauldron Queso- made with hatch chili gouda and based on a recipe by @sohlae 2. Eyeball Coupole- Coupole cheese from @vermontcreamery , filled with a homemade raspberry jam laced with pickled jalapeño juice. 3. Boo-rata - Burrata cheese draped in a slice of provolone with black bean features. New toy alert!! Ordered a girolle (aka cheese curler) for work and got to play with it yesterday. Originally used for Tête de Moine, a Swiss cow’s milk cheese, I put it to use with P’tit Basque, a French sheep’s milk cheese. The curls are much thinner than your average slice, allowing it to dissolve onto your palate. This allows for a more rounded tasting experience. Plus they just look awesome! I can’t wait to put these little cheese flowers on a cheeseboard! Have you ever used one of these before?
