Haku refers to himself as Kohaku (= amber), or rather Kohaku River as shortened full name. His real full name is Nigihayami Kohakunushi, the ""spirit of the Kohaku river"", the river where he lived.
Haku is a water spirit with various powers and abilities and his dragon form is a white one.
Haku is actually not written as 白 but as ハク, which means the meaning is left open to interpretation, but it's reasonable that his name refers to his white dragon form.
