Ingredients: 1 pound elbow macaroni. 2 cups pulled pork, cooked and shredded. 3 cups sharp cheddar cheese, shredded. 1 cup mozzarella cheese, shredded. 1/2 cup unsalted butter. 1/2 cup all-purpose flour. 4 cups whole milk. 1 teaspoon Dijon mustard. 1/2 teaspoon smoked paprika. Salt and black pepper to taste. 1 cup breadcrumbs. 2 tablespoons butter, melted. Fresh parsley, chopped, for garnish.
Instructions: Preheat your oven to 350F 175C. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside. In a large saucepan, melt 1/2 cup of butter over medium heat. Stir in the flour to create a roux and cook for 2-3 minutes until lightly golden. Gradually whisk in the milk, ensuring no lumps form. Continue cooking and stirring until the sauce thickens. Add Dijon mustard, smoked paprika, salt, and black pepper to the sauce. Stir in the shredded cheddar and mozzarella cheeses until smooth. In a large mixing bowl, combine the cooked macaroni, pulled pork, and cheese sauce. Mix until the macaroni is well-coated. Transfer the mac and cheese mixture to a greased baking dish. In a small bowl, mix the breadcrumbs with 2 tablespoons of melted butter. Sprinkle the breadcrumb mixture over the mac and cheese. Bake in the preheated oven for 25-30 minutes or until the top is golden and the cheese is bubbly. Garnish with chopped fresh parsley before serving.
