Pumpkin Roll
3 Eggs
1 Teaspoon lemon juice
¾ Cup flour
2 Teaspoons cinnamon
½ Teaspoon nutmeg
1 Cup chopped pecans
1 Cup sugar
2/3 Cup pumpkin
½ teaspoon salt
1 teaspoon ginger
Filling:
8 ounces of cream cheese softened
1 Cup confectioners sugar
½ Teaspoon vanilla
Preheat oven to 375 F. Beat eggs, add sugar gradually while beating constantly. Stir in lemon juice and pumpkin. Mix flour, salt, and spices together, fold into the wet mixture. Pour into a greased 15 × 17 inch jelly roll pan. Sprinkle with nuts. Bake for 15 minutes. Invert onto clean kitchen towel sprinkled with powdered sugar. Gently roll up with the towel like the cake is the filling and the towel is the cake. It should look like spiral. Let Cool.
Beat cream cheese, confectioners sugar, and vanilla until light. Unroll cake and spread cream cheese mix on cake. Reroll the cake with the frosting. Sprinkle with confectioners sugar. Keep any leftover in the refrigerator.
The cake does often rip. My mom has made so many of this recipe in the past and still has often had cracks and rips. Use more powdered sugar on the kitchen towel than you might think is necessary and make sure to roll when it is still quite hot, the colder it gets the more likely it is to rip. You can also substitute other nut meats. One classmate used to ask for it any time there was an event, though he wanted no nuts on it which you can also do.
