Low-Calorie, Gluten-Free Pumpkin Spice Protein Donuts

Ingredients:
- 1 cup oat flour (gluten-free)
- 1 scoop vanilla protein powder
- 1/2 cup pumpkin puree
- 1/4 cup unsweetened applesauce
- 1/4 cup unsweetened almond milk
- 2 tablespoons unsweetened applesauce
- 2 tablespoons maple syrup or honey (optional, adjust to taste)
- 1 tablespoon coconut oil, melted
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Pinch of salt
For the Glaze:
- 1/4 cup powdered erythritol (or powdered sugar for non-low-calorie)
- 1-2 tablespoons almond milk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick cooking spray.
2. In a large mixing bowl, combine oat flour, protein powder, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
3. In another bowl, whisk together the pumpkin puree, unsweetened applesauce, almond milk, melted coconut oil, and maple syrup or honey (if using).
4. Pour the wet ingredients into the dry ingredients and mix.
5. Spoon batter into the prepared pan, filling each cavity 3/4 full.
6. Bake in the preheated oven for 12-15 minutes
7. Allow donuts to cool in the pan for a few minutes before transferring them to a wire rack
8. To make the glaze, whisk together powdered erythritol, almond milk, vanilla extract, and pumpkin pie spice until smooth.
9. Dip each cooled donut into the glaze, then place them back on the wire rack to set.
10. Once the glaze has set, serve and enjoy!
