Hurricane Harvey didn't hit San Antonio too hard (Houston is getting blasted tho😕), but it DID cool off temperatures into the low 70s which is basically fall weather for us compared with the 100+ temps we've been experiencing for months. I was craving sweet potato pancakes all day yesterday, so today I whipped up these vegan beauties from @sweetpotatosoul and paired them with veggie sausage links from @amyskitchen.
