Get the free app from Recipe Drawer to save, share, and find recipes Raisin bread Ingredients 5 cups all purpose flour plus additional flour as needed 1-1/2 cups of raisins 1-1/2 cups milk 1/4 cup +1 teaspoon firmly packed dark brown sugar 1 tablespoon minced orange rind 1 tablespoon minced lemon rind 1 tablespoon salt 1/4 teaspoon ground mace 1/4 teaspoon ground ginger 1/4 teaspoon cinnamon Two large eggs Two packages active dry yeast One stick (1/2 cup) unsalted butter, melted and cooled, plus additional melted butter for brushing the dough Egg wash: one egg beaten with a pinch of salt Directions 1. In a heat proof bowl let the raisins soak in boiling water for 30 minutes or until plumped and softened, then drain them. Add the orange and lemon rinds and mix well. 2.  In a large bowl let the yeast sit in 1/2 cup lukewarm milk with 1 teaspoon dark brown sugar for 15 minutes or until foamy. Add the remaining 1 cup milk, butter, eggs, remaining 1/4 cup brown sugar, salt, mace, ginger, and cinnamon. With a wooden spatula stir in the flour, 1 cup at a time. Combine the dough well, adding more flour if necessary to make a soft and sticky dough. 3. Knead the dough on a floured surface, incorporating more flour if it is too sticky, for 8 to 10 minutes or until smooth. Form the dough into a ball. Put it in a bowl coated with vegetable oil and turn it to coat it with the oil. Let the dough rise in a warm place, covered loosely, for one and a half hours or until it is double in size. Punch down the dough and let it rise, covered loosely for 30 minutes more. 4. Halve the dough and roll each half into a 16 x 8” rectangle and brush each rectangle with the additional melted butter. Divide the raisin filling between the rectangles and, beginning with the short side, roll each rectangle, enclosing the raisin mixture, into a loaf. Fit the loaves, seem side down, into buttered loaf pans, 8 1/2 x 4 1/2 x 2-5/8”. Let them rise in a warm place, covered loosely, for one hour or until they have risen 1 inch above the tops of the pans.
