This Paleo mayo is made with healthy avocado oil and flavored with aromatic herbs and spices. It's perfect for dipping vegetables or using as a base for homemade dressings and sauces.
Ingredients: 1 cup avocado oil. 1 large egg. 1 tablespoon lemon juice. 1 teaspoon mustard powder. 1/2 teaspoon salt. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon black pepper. 1/4 teaspoon dried dill. 1/4 teaspoon dried parsley. 1/4 teaspoon dried chives.
Instructions: Place the egg, lemon juice, mustard powder, salt, onion powder, and garlic powder in a tall container or mason jar. Blend the ingredients together until they are well combined using an immersion blender. As you continue to blend, gradually add the avocado oil until the mixture thickens and emulsifies into mayo. Add the dried dill, dried parsley, dried chives, and black pepper to the mayo once it has thickened. Repeatedly blend for a brief moment to mix the herbs into the mayo. If needed, adjust the seasoning by tasting it. When you're ready to use the mayo, transfer it to a lidded container and keep it chilled.

Today's lunch is Buffalo Ranch Chicken Dip! I controlled the buttermilk by using buttermilk powder, and I substituted the sugar in the ranch dressing(homemade) to make this keto friendly and sugar free. The entire dish works out to about 25net carbs for the entire dish! I also roasted the chicken breasts with a chili lime rub adding to the layers of flavor. Buffalo sauce is Frank's RedHot with Butter, Smoked Paprika and Old Bay Seasoning. Topped with Cheddar and Colby Jack Cheese.
