Ready for a real sausage-party? Sausages in Cambodia is an interesting abundancy of taste, variations and cuisines. More than I have found in other asian countries in the region. You get them like small, flavourful and often hot local versions, of the same type that we will find homemade or made in the local butcher shop in Europe or North-America. Or this long, circular ones so popular at family bbqs the last few years. Normally the khmer bbq them, and cut them into chopstick friendly pieces, ready to dip in a sauce of choice and devour. There is also the more german style, longer sausages with varied sort of meat, different grades of grinded fillings and more classic herb, salt and pepper seasoning. Often served with mashed potato or polenta, pub-grub style. And of course the more bland us hot dog in a bun. The best beef sausages are made in the moslem quarter in Siem Reab, where the drying process means this tableau in front of lots of homes.
