Ingredients: 2 racks of baby back ribs. 1 cup of maple syrup. 1/2 cup of soy sauce. 1/4 cup of Dijon mustard. 3 cloves of garlic, minced. 1 teaspoon of smoked paprika. 1/2 teaspoon of cayenne pepper. Salt and pepper to taste.
Instructions: Get your grill or smoker ready by heating it up to 120F 250C. Take off the membrane from the back of the ribs so that the flavor can get in better. To make the glaze, mix maple syrup, soy sauce, Dijon mustard, minced garlic, smoked paprika, cayenne pepper, salt, and pepper in a bowl with a whisk. Put the ribs on the grill and smoke them for two hours, making sure the temperature stays the same. Every 10 minutes for the last 30 minutes, brush the ribs with a lot of the maple glaze. Because the ribs are done when they reach 190F 88C inside, take them off the grill. Before cutting between the bones, let the ribs rest for 10 minutes.
