Riso nero con porri e uova sode – Ricetta
Ingredienti (per circa 4 persone) 350 gr. di riso venere, 1 porro, 6 zucchine baby, 4 uova sode, 2 mozzarelle, menta fresca, sale, olio extra-vergine di oliva, pepe, sale grosso aromatizzato al vino rosso
Cuocete il riso in abbondante acqua salata. Nel frattempo lavate e tagliate a rondelle il porro e fatelo soffriggere in una padella antiaderente con un cucchiaio di olio extravergine di oliva fino a quando sarà appassito e dorato. Lavare e tagliare a piccoli cubetti le zucchine. Scolare e condire il riso con le verdure, le mozzarelle tagliate a pezzetti, foglie di menta fresca, olio e pepe a piacere. Decorare con rondelle di porro, fette di uovo sodo e condire con dei grani di sale grosso aromatizzato.

Ingredients (serves 4) 350 gr. of black rice, 1 leek, 6 baby courgettes, 4 hard-boiled eggs, 2 mozzarella, fresh mint, salt, extra-virgin olive oil, pepper, red wine-flavoured salt
Cook the rice in salted water. In the meanwhile rinse the leek and cut it into small rolls. Fry it in a pan with a tablespoon of extra-virgin olive oil until golden and soften. Wash the courgettes and cut them into small cubes. Mix the drained rice with the vegetables, the chopped mozzarella, fresh mint leaves, oil and pepper to taste. Finish with some golden leek, sliced eggs and season with the flavoured salt.
