Ingredients: 1 cup 200g granulated sugar. 1/2 cup 115g unsalted butter, melted. 2 large eggs. 1 teaspoon vanilla extract. 1/3 cup 40g unsweetened cocoa powder. 1/2 cup 60g all-purpose flour. 1/4 teaspoon salt. 1/4 teaspoon baking powder. 1/2 cup 90g semisweet chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a mixing bowl, whisk together the granulated sugar and melted butter until well combined. Add the eggs and vanilla extract to the sugar-butter mixture, and beat until the batter is smooth. Sift in the cocoa powder, all-purpose flour, salt, and baking powder. Mix until just combined, being careful not to overmix. Stir in the semisweet chocolate chips. Pour the batter into the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for approximately 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out with a few moist crumbs. Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
