Jackfruit Salsa & Shrimp on Rice Recipe---> 1 cup chopped ripe Jackfruit 1 large Jalapeño dices 1 mango cubed 1 lime zested, juiced, and as much of the flesh as you can save 1 pealed, cored and chunked pineapple (minus however much you eat while cooking 🤫) 8th tsp Chili Lime seasoning 1/2 tsp dry dill (or 1 tsp fresh) 1/2 tsp cane sugar Dash of cayenne Pinch of pink salt Combine all ingredients and refrigerate 20 min. (Or as long as your rice cooks if using rice.) For the Shrimp You can use precooked shrimp but I cooked mine in toasted sesame oil, salt, cayenne, and Tikka Masala seasoning, then tossed with the salsa and served over rice.
