Vegan Riz Casimir (Swiss Curry)
Riz Casimir
Even though it doesn’t look that way, Riz Casimir is a (more or less) traditional Swiss dish. It is more or less what Swiss people in the 50s thought to be ‘exotic’ food, a (very) mild curry with various ‘exotic’ fruits (bananas, pineapples and peaches mostly) and veal or pork on rice. The dish was invented by the founder of Mövenpick and was on the menu of Mövenpick restaurants since the 50s. It is until today a really popular dish for children as it easy to make and most children like it a lot (x)
Ingredients: 350g rice 1 tablespoon of butter 2 tablespoon of flour 1 tablespoon of mild curry 2 dl of bouillon 2 dl of milk 600g of meat cut into small slices (veal or pork) Some more butter Salt and pepper 2 Bananas, sliced 1 can of ananas 100g cherries in a can Some roasted almond flakes
Cook the rice in salted water like a true Swiss person (don’t you dare to steam it just put it in the water until it’s mushy). When it’s done, cover it and let it sit on the warm stove. Heat up the butter in a pan, add the flour and the curry and let it cook for about 1 minute while stirring. Add the bouillon and the milk, then reduce the heat, season with salt and pepper, then let it sit. Roast the meat with in a different pan for about 2 minutes, then add it to the sauce and let it sit. Put some more butter into the pan where you just roasted the meat in and roast the banana, the ananas and the cherries on smaller heat. You can now add it to the sauce directly if you want to, but it’s also possible to arrange everything like shown above. Serve with some roasted almond flakes on top, en Guete!
