Ingredients: 4 cod fillets. 2 tablespoons olive oil. 2 cloves garlic, minced. 2 tablespoons capers, drained. 1/4 cup Spanish olives, sliced. Salt and black pepper to taste. 1 lemon, sliced for garnish. Fresh parsley, chopped for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. Put the cod fillets on a baking sheet that has parchment paper on it. Put olive oil, garlic that has been minced, capers, and sliced Spanish olives in a small bowl. Spread the olive oil mixture out over the cod fillets so they are all covered. To taste, add salt and black pepper. Add a few lemon slices to the top of each cod fillet. Bake the cod in a hot oven for 15 to 20 minutes, or until it's fully cooked and flaky when pierced with a fork. Before serving, sprinkle with chopped fresh parsley.
