These delightful Raspberry Rose Vegan Macarons are both fruity and creamy, with a delicate hint of rose flavor. Made with aquafaba instead of egg whites, they're completely vegan while still maintaining that classic macaron texture.
Ingredients: 200g almond flour. 200g powdered sugar. 120ml aquafaba liquid from canned chickpeas. 100g granulated sugar. 1/4 tsp cream of tartar. 1 tsp rose water. 1/2 tsp raspberry extract. Pink food coloring optional. 1/2 cup vegan butter, softened. 1 cup powdered sugar.
Instructions: Warm the oven up to 300F 150C and put parchment paper on baking sheets. Pulse the powdered sugar and almond flour together in a food processor until they are well mixed. Sift the mixture into a large bowl, and then throw away any big pieces that are left. Hand-mix the aquafaba and cream of tartar in a different bowl until stiff peaks form. Slowly add the granulated sugar while beating the mixture until glossy peaks form. You can add food coloring, rose water, or raspberry extract after mixing it in. Carefully fold the almond flour mixture into the aquafaba mixture until it is just combined. Do not deflate the batter. Put the batter into a piping bag with a round tip. Place small circles on baking sheets that have been prepared, leaving space between each macaron. If there are any air bubbles, tap the baking sheets on the counter to get rid of them. Then, let the macarons sit at room temperature for 30 minutes so that a skin can form. They should be baked for 18 to 20 minutes, or until they are set and have feet. Take the pans out of the oven and let them cool all the way down on the baking sheets. Get the raspberry rose filling ready while the macarons cool. Beat vegan butter in a bowl until it's smooth. Add the powdered sugar slowly and beat until the mixture is smooth. Add the rose water and raspberry extract and mix well. Once the macarons are completely cool, put filling on half of them and then put the other half on top of it. Macarons can be kept in the fridge for up to three days in a container that doesn't let air in.
