Ingredients: 1 medium courgette, grated. 1 cup all-purpose flour. 1 tsp baking powder. 1/2 tsp salt. 1/4 tsp black pepper. 1/2 cup milk. 1 large egg. 2 tbsp grated Parmesan cheese. 2 tbsp chopped fresh herbs e.g., basil, parsley. 2 tbsp olive oil for frying.
Instructions: In a large bowl, combine the grated courgette, flour, baking powder, salt, and black pepper. In a separate bowl, whisk together the milk and egg until well combined. Pour the milk and egg mixture into the courgette and flour mixture. Stir until a thick batter forms. Fold in the grated Parmesan cheese and chopped fresh herbs. Heat the olive oil in a non-stick skillet over medium-high heat. Spoon the pancake batter onto the hot skillet, using about 1/4 cup of batter for each pancake. Cook the pancakes for 2-3 minutes on each side, or until they are golden brown and cooked through. Transfer the cooked pancakes to a plate lined with paper towels to remove excess oil. Serve the savoury courgette pancakes hot, garnished with additional herbs if desired.
