The challenge is not making the meals but having the children eat it when they are at school. Here are some healthy lunch options to pack for children that they may not toss in the trash.
Instructions: Mix the ingredients and put it on two slices of rye bread. Wrap with wax paper to keep the sandwich together
Grilled chicken and avocado wrap
Chopped tomatoes With seeds removed (so it doesn’t make the wrap too soggy)
Instructions: Grill Chicken the night before (chicken could be leftovers from the day before or made just for this sandwich)
Take Avocado cand mash it. You could make guacamole by adding spices.
Put all the ingredients into a whole wheat tortilla and then wrap in wax paper.
(You could wrap all of the ingredients in large romaine lettuce leaves but that is not kid friendly unless your children have been raised without bread.)
Asparagus and Cheese Panini
Gruyere (cheese your child likes)
Instructions: Place slices of cheese on the whole wheat tortilla and sprinkle with pepper. Top with ribbons of asparagus (use a potato peeler or vegetable slicer. Do not place whole pieces of asparagus unless you want them falling out of your kid’s sandwich. Put the sandwich in a panini press or in a skillet until the cheese melts. The melted cheese will hold the ingredients together.
Shredded rotisserie chicken
Instruction: Mix all the ingredients and place in a separate container from the rye bread.

Instructions: Make Chickpea chips. Grill bell peppers and then puree them in a food processor. Add salt and peper to taste. For the salsa, combine the tomatoes, onions, cilantro and shredded carrots. Pack the three dips separate from each other and the chips.
